Blackberry Fool

Serves 4. Kcals 249,

  • ½ vanilla pod

  • 250 g blackberries

  • ½ lemon

  • 165 ml double cream

  • 100 ml fat-free Greek yogurt

  • 6g granulated sweetener

  1. Scrape out the seeds of the vanilla pod. Put the 200 g of the blackberries in a saucepan and add the vanilla seeds, granulated sweetener and lemon juice. Bring it to a boil and let it simmer for approximately 4 minutes, until syrupy. Set aside to cool.

  2. In a bowl, whisk the cream to form peaks and fold through the yogurt with a third of the berry syrup.

  3. Create layers of the yogurt mixture in a dessert glass with the remaining syrup in between.

  4. Garnish with the remaining fresh berries.
